Banana Cake Recipe from Truffles, B & B, Big Bear

Banana Cake from Truffles B&B

½ c. Shortening
1 1/3 c. sugar
¼  tsp. salt
½ c. buttermilk
1 ½ c. mashed banana
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
2 eggs
1 tsp. vanilla

Preheat oven to 375°. Grease 9 x 13" pan. Cream shortening. In a separate bowl, mix all dry ingredients. Add dry ingredients and ¼ c. of buttermilk to the shortening. Beat for 1 ½ min. Pour into prepared cake pan. Bake for approximately 25-30 minutes or until you have a clean toothpick. Cool. Frost.
